Title: Provincale-Style Pasta Sauce

Yield: 1 Servings

2cDiced tomatoes
1/2cRoasted red bell peppers -
  Diced
1/4cOlive oil
1tbOlive oil
1/4cChopped fresh parsley
8 Olives, kalamata, italian
2tsFresh thyme or 1/2 tsp dried
2 Cloves garlic, minced
1tsCapers, drained

Combine all ingredients in a large bowl. Season to taste with salt and pepper. Makes about 3 cups. Serve with penne, zita or other tubular pasta. Recipe makes enough sauce for about 8 oz. pasta (dry weight). For good eating sprinkle with grated parmesan cheese before serving.
